Will either one of these radios do secure, or is there a radio like them that will?

They can 'do secure', but not anything heavy duty like DES or AES. They can be outfitted with third party boards to do anything from simple voice inversion to rolling code. A manufacturer like Transcrypt would be your best bet.

I noticed a secure 0/ symbol available in the display on a 1250 the other day. Does it come on with the aftermarket boards or is it just there as future option?

I have a number of HT1250s and CDM1550s with the Transcrypt 460 boards in them. The "secure" symbol (and the amber LED) illuminate when in secure mode.

The symbol also lights up when keypad lock is active on the portables.
