My dispatch center has an MIP5000 console with a black Motorola junction box. For now we just use the desk mike but I'd like to use a headset and connect it further to a phone.
I couldn't find any information about this box.

How would I go about connecting this console to a phone for headset use.
The pics show the "basic" DDN9492 heasdset box, which gives gooseneck/headset/footswitch capabilities. For telephone interface capability, you would need the "Enhanced" headset box, part# DDN9493, which has an extra "Auxilliary" port where the telephone audio would interface to.

You need to tell the MIP5000 which audio to use, when off hook it needs to route your audio through the headset to the phone. Then when you you press the PTT and/or are back on hook the MIP will send your audio to the radio. Also when off hook it should route the rx audio to speaker vs. the headset.
