Is it possible to run two different control heads off of a single APX7500 chassis? I'd like to run a O3 up front and an O5 in the back of a 2015 Tahoe for a Fire Department.

Yes, but you can't mix types, and it only works with the O2, O5 or O7 control heads

So basically, I am "SOL" if I want to use the O3? It would have two be two of the same of two of either the O2, O5 or O7 heads in any combination.
