I've got a GR1225 repeater, driving an external 50 watt continuous duty amp and a motorola UHF 4 cavity duplexer... Should this equipment perform ok for a GMRS repeater set up?

Well, it's going to work pretty crappy without an antenna or coax. Even if we knew what that was, we still don't know where it is mounted, how high is it, what is the terrain like, portables, mobiles, gain, loss, etc etc etc etc etc.

Should work...

The GR1225 should work fine with good cable and a proper antenna for your specific site.
Remember...

95.135 Transmitter power limits.

(a) No station may transmit with more than 50 watts output power.

(b) [Reserved.]

(c) A small control station at a point north of Line A or east of Line C
must transmit with no more than 5 watts ERP.

(d) A fixed station must transmit with no more than 15 watts output power.

(e) A small base station must transmit with no more than 5 watts ERP.

Turn down the power and it will never overheat on you.
