I am trying to connect an XTS-5000 to the CEB using a Remote Speaker/MIC cable NMN6191. I want to control the PTT and Audio functions at the Gold Elite Console. I have the pinout guide for the handset but cannot find one for the CEB. Any assistance would be appreciated.

Don't mean to be a pain - but why on earth would you want to do this?
Also, i think what you would have to do is have a tone control card (what part number your using would probably help the centracom guru's)...
A Tone remote adapter.
Then, i'm sure you could redirect the audio, tx, etc. However, it would probably take some audio balancing to get it to sound right....

Temporary Solution to the following problem,
New M/A-COM fixed infrustructure.
Big Fleet of XTS/XTL-5000.
Old System has been using DES-XL and OFB for long time.
M/A-COM has no OFB encryption on console at this time, boses will not turn off encryption, running three XTL-5000 thru CEB to use trunked system, have no more Tone Remotes, have XTS-5000 however. Don't want to spend any additional money.

You will require some sort of tone remote interface box between your CEB & the XTS5000, so more money is needed.
The card you use in the CEB is called a BIM...Base Interface Module. It talks to the radio with either 2-wire or 4-wire tone control. Thus the need for the tone remote interface box.
There are a few different ways to interface to the BIM card. If you're lucky, there is an 8-port RJ-45 strip, usually located at the top of the card cage rack. This connects to the card cage backplane via two 25-pair connectors & breaks out each BIM card to pins 1 & 2 and 4 & 5 in the RJ-45 connectors. In this scenario, you simply wire the RJ-45 to the tone remote box RJ-11 & away you go.
If you don't have that RJ-45 strip, then you need to wire the 25-pair connector(s) on the backplane to one of those big ol' ugly telco punchblocks that can accomodate the 25-pair cable. This breaks out the BIM card to specific pairs on the punchblock, though I don't have that info right in front of me.

A BIM with an AUX I card could do E & M keying but he'd still need to build an interface to go from balanced to unbalanced audio for rx & tx. The tone remote adapter is still the easiest way with a tone keying BIM as others have mentioned.

The BIM is a transformer input, so you really don't need to convert the radio to balanced output .
