Does anyone know how you can convert this radio from 16 conventional channels to 160.

Be careful who you bark at, newbie. His answer was 100% correct.
Motorola depot is the only place that can perform this upgrade. It involves changing the model number as well. There are no hacks or tricks available for this series of radio.
