Anybody know how to (the procedure etc) convert my Astro Saber II to Astro Saber III ?

Replace the housing, some of the time the keypad under the housing is already a M3 keypad. Just get a M3 housing (bit hard to find nowadays). Dump the s-rec of a ASIII radio to your target radio. Align it to spec.

S record of the radio. Basiclly the radio codeplug but in it's unpacked form. You need to use MTSX Lab to dump the s-rec to the radio. You can probably ask someone for this file. But asking for the software to do so is definitely out of the bounds.

I believe it has be to above R03.04.00. Search the board for details on how to do it.
