As always, a work-around was just around the corner...and in Microsoft's own release notes, no less: http://techreport.com/onearticle.x/11747 It involves installing Vista twice...once as a 30-day demo, then again as an upgrade. Then you delete the "vista.old" folder that contains the demo...
